Tomato Rice

Tomato Rice

This is a very humble rice dish,humble in the sense that the only vegetable/fruit used here is
‘tomato’.It is not at all humble in its taste πŸ˜‰ Infact it is one dish that can be prepared with ease
and the taste it gives you is really yummylicious!!!It is a great comfort food(out of my
experience).It is a spiced rish dish with a tangy punch.
Tomato rice is a dish originated from Tamil Nadu.My hubby’s folks though from Kerala, are
settled in Chennai.As far as I know,there is not one house in Chennai when tomato rice is not prepared atleast once a week!
Had a bad day at work?Heres a dish that will deal with all those blues today!!!

Ingredients:

Ripe Tomatoes – 4(chopped).
Rice – 1 cup(I used Basmati Rice).
Onion – 1 medium(sliced).
Ginger garlic paste- 1 tbsp.
Coriander leaves -a few(optional).
Turmeric Powder – 1/4 tsp.
Chilli Powder – 2 tsp.
Coriander Powder – 1 tsp.
Garam masala powder – 1 tsp
Green Chilli -1
Cinnamon -2 one inch pieces.
Cloves – 3
Cardamom – 2
Ghee – 1 1/2 tbsp(I used oil).
Water – 2 cups.
Salt

Procedure:

1.Chop the tomatoes and Keep aside.
2.In a Pressure cooker,heat oil/ghee and add Cinnamon,Cloves and Cardamom and saute till it emits
an aroma.
3.Now add Ginger Garlic paste,Onions and Coriander leaves and saute till raw smell
disappears.
4.Now add Chilli Powder,Coriander powder,Turmeric Powder,Garam masala powder and green
chilli and saute for a minute.
5.To this add the chopped tomatoes and saute well till tomato is mashed well.Now add washed
rice and saute well.
6.After this,add water and salt and mix well and cook with lid closed for 3 whistles.
7.When the pressure releases.open the lid amd fluff gently with a fork.
8.Transfer to a serving plate and serve hot with Raita or pickle!

Sweet Toast

Now adays my youngest one is a little cranky..So i have always been in a hurry in kitchen,
working out easy recipes,cooking something easy and less time consuming but yielding
wonderful results.Cooking Breakfast has always been challenging to me…may be because of
my inner reluctance to leave the cozy warmth of my comfy bed πŸ™‚
So today I am posting something easy so that it will chase away all those early morning blues πŸ™‚
So that you can cook quick,serve quick and eat quick!!!

Recipe Source:My ammas Kitchen.

Ingredients:

Bread – 4 slices.
Egg – 1(big)
Milk – 4 tbsp.
Sugar – 2 tbsp.
Vanilla essence – 1 tsp.
Oil – 2 tbsp

Procedure:
1.Beat Egg in a flat bowl and then pour milk and mix again.
2.Add sugar and Vanilla esssence and mix till sugar dissolves.
3.Now place one bread slice to this mixture.Then flip over the bread slice and prick the bread
slice here and there to allow better absorption.
4.Heat oil in a flat pan and toast the bread on both sides till the colour changes(like the one in
the picture).
7.Transfer to a serving plate.Similarly toast all the bread slices and serve hot!

Notes:
This snack can be made for breakfast as well as an evening snack with tea.Either ways,its
simply delicious!!Kids will love it.Thats my guarantee!!!

Chicken Burger Delight

Sunday mornings are generally lazy mornings for me..I usually tend to wake up late and then
run to kitchen racking my brain to prepare a quick breakfast for my hubby n kids πŸ™‚ I am not an expert…but it is during this time when my brain gives me ideas for something new for
breakfast and believe it turns out to be really really mouthwatering and the result -A few really satisfied smiles.What more can I ask for?? πŸ˜‰
So this recipe, ‘Chicken Burger Delight’ was what popped up in my mind this sunday.Try it out
guys!!Really lip smacking Mmmmmm!!!!!

Ingredients:

Burger buns – 3.
Mayonnaise – 4 tbsp.
Yoghurt – 1 1/2 tbsp(unsour)
Tomato Sauce – 1 tbsp.
Pepper Powder – 1 pinch.
Cooked and Shredded Chicken – 1/2 cup.

Procedure:

1.Slice the Burger Buns into two and keep aside.
2.In a Bowl,Mix the mayonnaise,yoghurt,tomato sauce,pepper powder well.
3.To this add the shredded chicken pieces and combine well.

4.Take the burger bun.On the inside of the lower slice,put 2tbsp of the chicken mixture and
spread evenly and cover with the other slice.
5.Decorate with cherries as shown in the picture and Serve!

Notes:
You can use Left over Chicken for the filling if you have any.If you dont,then you can use chicken cooked with a little salt and pepper.Shred it after cooking and then use.

Jeera Rice/Cumin Rice

Jeera Rice or Cumin Rice as the name suggests is Rice flavoured with Cumin as the main spice
and other whole spices.This is a very humble Rice dish that can be prepared quite quickly and
unlike Fried Rice or Biriyani,it doesnt have any veggies in it and so there is no time lost cutting vegetables πŸ™‚ and this is an ideal dish if you have guests coming over and you have short time
notice πŸ™‚ .This dish goes well wit any curries or kurma or even stew!!
Cumin is a spice which aids in digestion.So you can imagine the health benifits of eating jeera
rice once in a while.And for those people who have problem with ginger or garlic,this is an
ideal dish,since it neither contains ginger or garlic.
I usually make this dish when I am too lazy to chop vegetables πŸ˜‰ .Here goes the recipe.Try it out
guys!!

Ingredients:

Basmati Rice – 2 cups.
Cumin/Jeera – 3tsp.
Cinnamon/Patta – 3 1 inch pieces.
Cardamom – 4.
Bay Leaf – 1
Cloves – 4.
Mace threads – 3.
Ghee – 2 1/2 tbsp(I used Oil).
Water – 4 cups.
Salt to taste.

Procedure:
1.Wash the rice well and keep aside.
2.Heat Oil/Ghee in a pressure Cooker.
2.Add the cumin and all the whole spices said above.
3.Once the ghee/oil starts giving the spiced aroma,add the washed Rice and saute for about 2
minutes.
4.Now add water and salt.
5.Close the Lid and pressure cook for 3 whistles.
6.When pressure releases,fluff the rice with a fork and serve with curry/kurma.

When it comes to rain and rainy days,I am that kind of person who would like to recluse to myself with a warm cup of tea and snacking something wonderful..something sweet..something fried πŸ™‚ Β rather than get wet and enjoy the rain .I am sure many of you would certainly agree with me.Now the rain was over and the gentle rays of sunlight began to beam..I thought now is the time to prepare a snack..something easy,something less time consuming,something that can be prepared in a jiffy.So i prepared these tiny little baby donuts and the kids specially my youngest one loved it.
One thing I have to tell you about this recipe is its ease of preparation,no advance soaking,kneading etc.And another thing is getting the baby donuts in a round shape is a little tricky.But you will get the hang of it just after you fry 3-4 donuts.Thats how it was for me.But its sooo tasty,everyone in your family will praise you for it.That I am pretty sure!!! This is how the recipe goes.

Ingredients:

Wheat flour/Atta – 1 cup.
Yoghurt – 3 1/2 tbsp (unsour)
Sugar – 1/2 cup
Vanilla essence – 1 tsp.
Oil – 1 tsp.
Water – 5 tbsp.
Oil for deep frying.

Procedure:

1.Mix wheat flour, yoghurt, sugar, vanilla essence, and oil well in a bowl.
2.Now add water slowly to make a batter of slightly thick consistency.
3.Heat the oil for deep frying in a pan on medium to high flame.
4.Slowly drop 1 tsp of batter at a time into the oil. Do not crowd the frying pan.
5.Fry the baby donuts golden brown uniformly, turning them occasionally.
6.Once golden brown all over,remove from oil and place over a kitchen towel to drain off the
excess oil and serve Β with a warm cup of tea and Enjoy!!

 

Stuffed Chicken Roast

Stuffed Chicken Roast

This is a moist,juicy and succulent stuffed chicken roast most suitable for Easter or Thanks-
Giving or Christmas.It is a very easy recipe with not much advanced preparation and the
stuffing used here is Basmati Rice and the yummy taste it will give you..now thats a guarantee
from me!!
Its a perfect Chicken recipe,any chicken lovers will dream about.For me,cooking this for my
family is a dream come true!!I have always dreamt about making a stuffed whole chicken dish
and when I told my amma about my confusion regarding what to prepare for Easter..something
apart from the usual biriyani or fried rice..She gave me this recipe! And when I just went
through the recipe, I just knew it would be a super dee duper hit! And thats what it turned out
to be!So This is how the recipe goes.

Ingredients:
1.Chicken – 1 whole.
2.Ghee – 1/4 cup.
3.Onion – 1 big(Chopped finely)
4.Basmati rice – 1/2 cup.
Cashewnuts- 25 gms
Almonds – 25gms(Sliced length wise).
5.Chilli powder – 1/4 tsp
Coriander powder – 1/4 tsp.
Garam masala – 1/4 tsp.
Nutmeg Powder – 1/4 tsp.
Pepper powder – 1/2 tsp.
6.Water – 1 1/4 cup.
7.Salt to taste.
8.Pepper powder- 1 1/2 tsp.
Chilli powder – 3 tsp
Salt – 1/2 tsp or to taste.
Lime juice – juice of half a lemon.
9.Ghee – 1/4 cup.
10.Kitchen twine or thread for tying the hands and legs.

Procedure:
1.Pre heat the oven to 180 degree C.
2.Skin the chicken and clean it thoroughly.
3.Make tiny cuts/slits on the chicken.Keep aside.
4.Heat ingredient under ‘2’ in a pan,and add onion.
5.Saute it till its transparent.Now add ingredient under’4′ and ‘5’ and saute till raw smell
disappears.Then add ‘6’.Cook closed with a lid till there is no more water or till the rice is
cooked.Now add Salt to taste.Mix well and Keep aside to cool.
6.Fill the Chicken with the above cooked rice (into the cavity)and stitch the opening well.
7.Tie the legs together and then the hands together with a kitchen twine.
8.Mix ingredients under ‘8’ in a small bowl well and smear it on the chicken all over and into
the cuts and slits so that masala penetrates well.Keep aside for half an hour.
9.After the said time,Keep the chicken on a roasting pan and pour ‘9’ on the chicken.Keep in
the pre heated oven and bake for 2 hours or till done.Every half an hour,take the roasting
pan out and turn the chicken to ensure even cooking.
10.When done,take the chicken out,untie the hands and legs.
10.Serve as whole or take out the rice from inside and spread on a serving plate with the sliced
chicken pieces on it and Enjoy!!

Notes:
1.Remember to tie the hands and legs tightly.Otherwise you will end up cooking a very funny
looking bird πŸ™‚ .

Spring Onion Thoran/Spring Onion Stir Fry with Coconut

When it comes to thoran(stir fry with Coconut),we usually use carrots or cabbage or any other
veggies..This dish is the outcome of the situation when a bunch of spring onions are the only
vegetables left in the veggie tray of your fridge!!I have become very lazy nowadays to go to the
market to get my vegetables.But the surprising part is that this turned out to be sooo good.
So mark my words…this thoran/stir fry is toooo tasty!!Try it out!!!

Ingredients:
Spring onions – 1 bundle.
Green chilli – 1.(Chopped)
Grated Coconut – 1 cup.
Cumin seeds – 1 pinch
Garlic – 2 cloves.(Crushed with skin)
Oil – 1 tbsp.
Mustard seeds – 1 tsp.
Salt to taste.
Turmeric Powder – 1/4 tsp.

Procedure:
1.Remove the base portion of the spring onions,wash well under running water and chop finely.
2.In a pan,heat oil and add the mustard seeds and wait till they splutter.
3.To this,add the chopped Spring Onions,Chopped Green Chilli,Grated Coconut,Cumin seeds,
Crushed Garlic,Turmeric powder and Salt and mix well.
4.Cover and cook under low flame,mixing in between.
5.When done,transfer into a serving plate and serve with Rice and Enjoy!!
