Chocolate cupcakes with Easy Frosting(EGGLESS)

Baking cupcakes with family is the best thing that can happen to us 🙂 …Today evening,after my
boy and gal watched a tv cartoon “Cooking with Carlo”,they have been running after me saying,
“Momma we wanna cook” i decided to actually “Let them do it”!! I asked them to bake their
own cupcakes!!!And guess what,they turned out to be perfect!! They baked the perfect
Chocolate cupcakes!(Did I tell you?Both my kids are hard core chocaholics unlike me!And
so is my husband !!They have got it from him 😉 ) And we did some easy frosting too..Don’t they
look lovely 🙂 The pink frosting done by my daughter manisha(with my help 😉 ) and she named
it “Princess cupcake” ! and the Brown Frosting done my sonny boy, Ashmit and he named it
“The super Chocolatey cupcake” !
This is a very easy version and believe me,you can do it easily with ur kids!And they will love
you for it!So What are you waiting for??Try it out!!



1 cup milk+ 1 tsp white vinegar
1/3 cup oil
3/4 cup granulated sugar
2 tsp vanilla essence
1 cup all purpose flour
1/3 cup cocoa powder, sifted
3/4 tspbaking soda
1/2 tsp baking powder
pinch of salt.

1.Preheat oven to 350 degrees.
2. Line cupcake trays with paper liners and set aside .
3.In a large bowl, Beat oil and sugar together and add the vanilla essence.
4. In a cup, mix almond milk and vinegar together. Set aside to curdle.
5. Take another bowl and sieve all the dry ingredients and keep aside.
6.Alternately mix in wet and dry ingredients to the batter and combine well.
7. Pour evenly into the cupcake tray(with liners) .
8.Bake for 15 minutes or until toothpick comes out clean.
9.Take it out of the oven keep aside to cool completely.

This recipe makes 18 cupcakes.These cupcakes are too tasty even without frosting.So control
yourself and save them for frosting 🙂 🙂 🙂

Now,here first we made a basic frosting and divided into two equal portion to make the pink
chocolatey frosting.

Basic Frosting:
1/2 cup softened butter
2 cups powdered sugar/icing sugar
1 tbsp milk

Beat all the ingredients in a bowl with a mixer for 3-5 minutes or until smooth and Fluffy.

Now divide into 2 equal portions.To one portion,add 2 tsp of Strawberry Flavouring and to the
other,add 2 tsp of Chocolate flavouring and beat both the portions with mixer to mix well.Frost
the cupcakes ,add sprinkles or edible beads and decorate as desired.

Incase you dont need these two flavouring,just add 2tsp of Vanilla essence to the Basic Frosting
Recipe above and Frost the cupcakes.
